This is a short work published in Tizimin, Yucatán, in 1878, entitled El Bo-Keban (The Bo-Keban) and adapted in 2025 as El Pecaminoso Relleno Negro (The Sinful Black Filling).
Some time ago, many comments about our delicious and traditional black filling spread like wildfire on social media. Yucatecans, as always, defended our customs and, above all, our beautiful and syncretic cuisine.
In 2023, one of our state’s most famous historical narrators, Rafael Gómez Chí (Crónicas Delirantes), made a video about this typical Yucatecan dish, which can be found on a famous digital platform. In it, he briefly recounts the history of Bo-Keban. In it, our great Rafael recounts that Kantunil is gaining considerable prestige for its already famous Relleno Negro (Black Filling), which is generally prepared during its patron saint’s day in honor of Saint Francis of Assisi and Candlemas. Of course, this typical dish is also served at other regional festivals.
With this in mind, the author, taking some old books out of his old drawer, was able to find this brief history of our fascinating Relleno Negro (Black Filling). The original story, entitled The Bo-Keban (Purification or Washing of Sins), is by Aristophanes, a famous Yucatecan writer of the early 20th century, who immerses us in an experience that combines the bucolic with the disturbing, the cultural with the superstitious, and the human with the divine. Through the narration of a morning walk in the mountains, the author leads us by the hand toward an unexpected encounter with a Mayan tradition (now syncretized) that challenges convention and provokes profound reflection on customs, death, and human redemption.
